Valençay - Old Vineyards - Domaine André Fouassier

Viticulture: traditional reasoning, using indigenous yeasts. Vattings fairly short for red valençays of the order of 10 to 15 days. Dry whites from vinification in tanks that sometimes perform their malolactic fermentation André Fouassier is a very nice winemaker who grows 23 ha of vines including 11 ha on the AOC Valençay (which has 130). The vines are planted on soils that mix clays with flint, limestone and sand. The winemaker likes to say that his wines have an astonishing similarity with the soils from which they come: flexibility of the sands, power of the clays, sharpness of the flint and vivacity of the limestone ... This vinegrower with the classic methods practices vinification very little interventionist. Native yeasts, for both whites and reds, very reasoned use of sulfur and filtration on land. The result is fruity and supple white wines, with a good taste.

Domaine BILLARD Père et Fils is a family estate located in La Rochepot, 15 km south of Beaune. Jérôme Billard has run this business since 1999, with the passion and love of his profession necessary to obtain great Burgundy wines. The vineyard covers 21 hectares and produces wines of great renown. Combining tradition and innovation, the Domaine Billard's motto is "the expression of the typicality of the terroir". The constant search for quality and the desire to extract the best from the terroir is reflected in a reasoned approach. Whether in the vineyard or cellar, everything is done to let the terroir express itself. Four regional appellations (Aligoté, Hautes Côtes de Beaune white and red, Crémant), six appellations villages (Auxey-Duresses red, Beaune red, Chassagne-Montrachet red, Pommard, Saint Romain white and red) and three first wines (Saint Aubin first white and red vintage, Beaune premier cru rouge) make up the Domaine's production range. The exploitation is in fight reasoned without treatments acaricide and insecticide so as to develop a population of typhlodromes and without chemical fertilizers, only contributions of organic compost for the balance of the vine and the wine. The size and disbudding are severe for a good control of the yields and the soil is worked thanks to regular plowing. The harvest is manual and a sorting of the harvest is done to optimize the quality. The yeasts are exclusively indigenous (from the fruits) so as to allow the terroir to express itself. The design of the vat room favors the use of gravity: as a result, the wine undergoes less mixing and less oxidation. For the reds: Traditional Burgundian winemaking. Sorting and destemming at 100%. Vatting 15 days with punching (punching the grapes), low pneumatic pressing to bring finesse and develop the fruit aromas. Aged in oak barrels for 12 to 18 months. For whites: Low pressing (pneumatic press) in whole harvest to bring aromatic purity and a nice balance. Alcoholic fermentation and aging in barrels of 12 months with batonnage (Meursault type breeding)

Sancerre- Domaine du Nozay-The White Terres

Domaine du Nozay Le Nozay is a small 17th century castle located near the village of Sainte Gemme en Sancerrois north of Sancerre. The property entered into the lap of the family after having belonged to Marguerite de Bonnemain (December 16, 1853-July 16, 1891) mistress of General Boulanger (April 29, 1837 - September 30, 1891) The Nozay takes a different form in 1961 to the announcement of the new expansion area of the Sancerre appellation in the municipality of Sainte Gemme en Sancerrois. It was in 1970 that Baron Philippe de BENOIST and his wife Marie-Hélène came to settle in Nozay Castle in this magnificent setting which later became the Domaine du Nozay Armés their will and their eagerness to create a vineyard in Sancerre, Philippe and Marie-Hélène BENOIST plant the first hectare of sauvignon, the king grape variety of Sancerrois, in 1971 an area that they will extend over time to 15 hectares. After a first harvest in 1974, the medals and other prizes are not long in coming to reward the work of Philippe, joined in the vineyard and the cellars for some years by his son Cyril. The latter has made his weapons among the older brother of Marie-Hélène, Aubert de VILLAINE, co-manager of the mythical Domaine de la Romanée Conti, and owner of a vineyard in Bouzeron, A and P VILLAINE assisted for ten years year by Pierre de BENOIST the second son of Philippe and Marie-Hélène. Convinced of the benefits of organic cultivation, the Domaine du NOZAY has been in conversion since 2011. In order to be able to adopt an environment-friendly approach, and controlled yields, they intend to take the Domaine du NOZAY to the top of the quality.
